What Plant AM I?
I am a grass plant with a high sugar content. I have a naturally occurring recessive mutation in the genes which control the conversion of sugar to starch inside my seed. Unlike other types of me, I am harvested when the kernels are swollen but not dry.
I am picked when immature (milk stage) and prepared and eaten as a vegetable, rather than a grain.
I was a spontaneous mutation that was grown by several Native American tribes. The Iroquois gave the first recorded me my first name called 'Papoon to European settlers in 1779.
